Abstract
Description
[1] ココナッツオイル及びココナッツミルクからなる群より選択される1種以上を有効成分とすることを特徴とする、ビール様発泡性飲料用乳酸菌増殖抑制剤。
[2] ココナッツオイル及びココナッツミルクからなる群より選択される1種以上を含有することを特徴とする、ビール様発泡性飲料。
[3] ココナッツオイル又はココナッツミルクの含有量が、0.001%(w/v)以上である、前記[2]のビール様発泡性飲料。
[4] ココナッツオイル又はココナッツミルクの含有量が、0.01%(w/v)以上である、前記[3]のビール様発泡性飲料。
[5] ココナッツオイル又はココナッツミルクの含有量が、0.1%(w/v)未満である、前記[2]〜[4]のいずれかのビール様発泡性飲料。
[6] ホップを原料としない、前記[2]〜[5]のいずれかのビール様発泡性飲料。
[7] 発酵ビール様発泡性飲料である、前記[2]〜[6]のいずれかのビール様発泡性飲料。
[8] ココナッツオイル及びココナッツミルクからなる群より選択される1種以上を原料とすることを特徴とする、ビール様発泡性飲料の製造方法。
[9] ホップを原料としない、前記[8]のビール様発泡性飲料の製造方法。
ビール酵母(Saccharomyces pastorianus:以下、「S. pastorianus」)と、乳酸菌の環境単離株(Lactobacillus brevis:以下、「L. brevis」)について、ホップを含有させた麦汁と、ホップなしで調製された麦汁における増殖性を調べた。
S. pastorianusは、CP加ポテトデキストロース寒天培地(栄研化学社製)に接種し、L. brevisはMRS液体培地(de Man, Rogosa and Sharpe、Merck社製)に接種し、それぞれ25℃で3日間培養した。
前培養した菌体を、1mL当たりの菌数が約105個となるように滅菌生理食塩水に懸濁させたものを、菌液とした。
麦芽40kgと水160Lとの混合物を、58℃で20分間保持してタンパク質の分解処理を行った後、64℃で20分間保持して麦芽由来成分を糖化した。糖化処理後の混合物を濾過し、ホップを含まない清澄な麦汁を得た。
オートクレーブで加熱殺菌時にホップを添加した以外は同様にして調製し、フィルター除菌したものを、ホップ含有麦汁とした。
無ホップ麦汁又はホップ含有麦汁に、S. pastorianus又はL. brevisを、96ウェルプレートにウェル当たり103個/100μLとなるように播種し、25℃で培養し、600nmの吸光度を経時的に測定した。吸光度は、「VICTOR Nivo Multimode Plate Reader」(製造元:PerkinElmer社、S/N:HH35L3517059、励起フィルター:600/10 nm)を用いて測定した。バックグラウンドの測定として、微生物未接種サンプルを使用した。
参考例1で使用したS. pastorianus及びL. brevisのココナッツオイル又はココナッツミルク存在下における増殖能を調べた。
ココナッツオイルは、「日清有機エキストラバージンココナッツオイル」(日清オイリオグループ社製)を用い、ココナッツミルクは、ココナッツミルクパウダー(富澤商店社製)を用いた。
参考例1と同様にして調製したS. pastorianus又はL. brevisの菌液(菌数:約105個/1mL)を、96ウェルプレート(8行×12列)に、ウェル当たり10μLずつ接種し、各濃度に調整したココナッツオイル又はココナッツミルクを含有する無ホップ麦汁を90μL加え、10.5℃で21日間、嫌気条件で培養した。コントロールとして、ココナッツオイル及びココナッツミルクを無添加(0.00%(w/v))の無ホップ麦汁を用いて同様に培養した。接種菌液の生菌数(試験菌数)は、CP加ポテトデキストロース寒天培地又はMRS寒天培地を用いた平板塗抹培養法により測定し、接種菌液の生菌数に換算し算出した。
また、各ウェル中の溶液は、参考例1と同様にして経時的に600nmの吸光度を測定し、微生物の増殖を調べた。

- ココナッツオイル及びココナッツミルクからなる群より選択される1種以上を有効成分とすることを特徴とする、ビール様発泡性飲料用乳酸菌増殖抑制剤。
- ココナッツオイル及びココナッツミルクからなる群より選択される1種以上を含有することを特徴とする、ビール様発泡性飲料。
- ココナッツオイル又はココナッツミルクの含有量が、0.001%(w/v)以上である、請求項2に記載のビール様発泡性飲料。
- ココナッツオイル又はココナッツミルクの含有量が、0.01%(w/v)以上である、請求項3に記載のビール様発泡性飲料。
- ココナッツオイル又はココナッツミルクの含有量が、0.1%(w/v)未満である、請求項2〜4のいずれか一項に記載のビール様発泡性飲料。
- ホップを原料としない、請求項2〜5のいずれか一項に記載のビール様発泡性飲料。
- 発酵ビール様発泡性飲料である、請求項2〜6のいずれか一項に記載のビール様発泡性飲料。
- ココナッツオイル及びココナッツミルクからなる群より選択される1種以上を原料とすることを特徴とする、ビール様発泡性飲料の製造方法。
- ホップを原料としない、請求項8に記載のビール様発泡性飲料の製造方法。
