Abstract
Description
(1)酸カゼイン、レンネットカゼイン及びカゼインの塩から選択される1種又は2種以上のカゼイン原料を含有する油中水型乳化物と、粉体原料と、糖類とを含有する焼菓子生地を焼成する、焼菓子の製造方法であって、
前記油中水型乳化物中の前記カゼイン原料の含有量が、前記粉体原料100質量部に対して0.3〜5質量部であり、前記糖類の含有量が、前記粉体原料100質量部に対して15〜100質量部であることを特徴とする前記焼菓子の製造方法。
(2)糖類が、単糖類及び/又は二糖類であることを特徴とする上記(1)に記載の焼菓子の製造方法。
(3)カゼイン原料が、油中水型乳化物中の油脂100質量部に対して0.5〜14質量部含まれることを特徴とする上記(1)又は(2)記載の焼菓子の製造方法。
(4)焼菓子の水分が、20質量%以下であることを特徴とする上記(1)〜(3)のいずれか記載の焼菓子の製造方法。
(5)焼菓子生地に、さらに膨張剤を添加することを特徴とする上記(1)〜(4)のいずれか記載の焼菓子の製造方法。
60℃に加温した油脂に対して大豆レシチン、蒸留モノグリセリドを添加、溶解し油相とした。60℃に加温した水に食塩、カゼインNa、リン酸塩を溶解し、水相とした。油相を撹拌しながら水相を加えて乳化し、定法に従って冷却、練りを加えて可塑性の油中水型乳化物A及びBを得た。原料の配合比は、以下の表1に記載のとおりである。ここで、油脂としてパーム油、豚脂、なたね油の混合物を用いた。
2−1 製造方法
以下の(1)〜(7)の手順により、ビスケットを製造した。
(1)表2に示す原料を、5倍量となるよう用意した。ここで、酵素製剤としてプロテアーゼを含む酵素製剤を用いた。
(2)油中水型乳化物A、マーガリン、上白糖、ココアパウダー、及び全卵を混合、撹拌した。
(3)さらに、水20質量部に食塩、炭安、GDL(グルコノデルタラクトン)を溶解した物を加え、混合、撹拌した。
(4)さらに、薄力粉と重曹を加えて混合、撹拌した。
(5)さらに、水1質量部に酵素を分散させたものを加えて混合、撹拌した。
(6)4つ折り、2つ折りにした生地を2mmのシート状に延ばし、ピケ(穴あけ)を行って型抜きをした。
(7)天板に並べ、230℃で5分焙焼した。
訓練された5名のパネラーにより、食感の軽さ、口溶けについて以下の基準により官能評価を行った。

0点 比較例2と同等
−1点 比較例2よりもやや劣っている
−2点 比較例2よりも劣っている
2点 比較例2よりも非常に口溶けが良い

結果を表2に示す。なお、表中の原材料の配合量は、質量比を表す。
3−1 製造方法
以下の(1)〜(6)の手順により、ビスケットを製造した。
(1)表3に示す原料を、5倍量となるよう用意した。
(2)油中水型乳化物A又はB、マーガリン、上白糖を混合、撹拌した。
(3)さらに、全卵、卵黄、水に溶解した食塩及び炭安を加え、混合、撹拌した。
(4)さらに、薄力粉、重曹を加え、混合撹拌した。
(5)3mmの厚さのシート状に成型し、型抜きした。
(6)天板に並べ、210℃で9分焙焼した。
訓練された5名のパネラーにより、食感の軽さ、口溶けについて以下の基準により官能評価を行った。

0点 比較例3と同等
−1点 比較例3よりもやや劣っている
−2点 比較例3よりも劣っている

結果を、図1及び表3に示す。なお、表中の原材料の配合量は、質量比を表す。
Claims (5)
- 酸カゼイン、レンネットカゼイン及びカゼインの塩から選択される1種又は2種以上のカゼイン原料を含有する油中水型乳化物と、粉体原料と、糖類とを含有する焼菓子生地を焼成する、焼菓子の製造方法であって、
前記油中水型乳化物中の前記カゼイン原料の含有量が、前記粉体原料100質量部に対して0.3〜5質量部であり、前記糖類の含有量が、前記粉体原料100質量部に対して15〜100質量部であることを特徴とする前記焼菓子の製造方法。 - 糖類が、単糖類及び/又は二糖類であることを特徴とする請求項1に記載の焼菓子の製造方法。
- カゼイン原料が、油中水型乳化物中の油脂100質量部に対して0.5〜14質量部含まれることを特徴とする請求項1又は2記載の焼菓子の製造方法。
- 焼菓子の水分が、20質量%以下であることを特徴とする請求項1〜3のいずれか記載の焼菓子の製造方法。
- 焼菓子生地に、さらに膨張剤を添加することを特徴とする請求項1〜4のいずれか記載の焼菓子の製造方法。
