試験例1で製造したサンプル5のビールテイスト飲料にホップエキストラクト(三栄源エフ・エフ・アイ社製)を添加して、表3に示す苦味価に調整し、サンプル8〜11を得た。サンプル5及び8〜11について、飲用したときの口当たり及びドリンカビリティーの官能評価を行った。官能評価は、訓練された6名のパネルにより、5段階(5:非常に良好、4:良好、3:普通、2:不十分、1:非常に不十分)で行い、その平均値を評価スコアとした。官能評価結果を表3に示した。なお、苦味価は、改訂BCOJビール分析法(公益財団法人日本醸造協会発行、ビール酒造組合国際技術委員会〔分析委員会〕編集、2013年増補改訂)の「7.12 苦味価」及び「8.15 苦味価(IM)」に記載されている方法によって測定した。

試験例1で製造したサンプル5のビールテイスト飲料に50%乳酸(和光純薬工業社製)を添加して、表4に示す酸味度(クエン酸換算量)に調整し、サンプル12〜14を得た。これらのサンプルについて、試験例2と同様の方法で、飲用したときの口当たり及びドリンカビリティーの官能評価を行った。官能評価結果を表4に示した。
