Claims (19)
- 冷凍ひき肉を保存する方法であって、
a)冷凍ひき肉を密封パッケージにパックし;
b)パックした冷凍ひき肉を圧力容器に入れ、容器を封鎖し;
c)パックした冷凍ひき肉を含有する圧力容器を少なくとも約50,000 psiの圧力に加圧し、そして、そのパックした冷凍ひき肉を上昇した圧力下に入れ;
d)パックした冷凍ひき肉への上昇した圧力を約1から約300秒間、約-50から約45°Fの温度に維持し;
e)ついで、パックした冷凍ひき肉への圧力を周囲圧に減圧し;そして、
f)そのパックした冷凍ひき肉を圧力容器から取り出す
ことを含む、方法。 - 肉がパックされる前に冷凍される、請求項1の方法。
- 肉がパックされた後に冷凍される、請求項1の方法。
- 上昇した圧力が、約50,000 psiから約130,500 psiである、請求項1の方法。
- 上昇した圧力が、約60,000 psiから115,000 psiである、請求項1の方法。

- 冷凍ひき肉が、酸素置換ガス環境を有する密封パッケージにパックされる、請求項1〜7いずれかの方法。
- ガス環境が、二酸化炭素、一酸化炭素、窒素、酸化窒素、水素、ネオン、アルゴン、クリプトン、キセノンおよびそれらの混合物から選択されるガスを含む、請求項8の方法。
- 冷凍ひき肉が牛ひき肉を含む、請求項1〜9いずれかの方法。
- パックした冷凍ひき肉が約1/8から約25ポンドの肉の肉分量である、請求項1〜9いずれかの方法。
- パックした冷凍ひき肉が約1/8から約5ポンドの肉の肉分量である、請求項11の方法。
- 冷凍ひき肉がパテの形態である、請求項1〜12いずれかの方法。
