Abstract
Description
The present invention relates to a microwave vacuum dryer and a drying method using the microwave vacuum dryer that are dried until a predetermined moisture content is irradiated by microwaves in a reduced-pressure atmosphere. The present invention relates to an apparatus that can process an object to be dried at the same time and can switch a drying control state according to the type and properties of the object to be dried.
Conventionally, various dryers using microwaves have been developed and used for drying various objects to be dried. In addition, when drying a large amount of objects to be dried, a continuous dryer that dries while moving the objects to be dried on a conveyor or a multistage shelf as shown in
In addition, when sugar-containing fruits such as strawberries and tangerines are dried, a good decrease in water content is observed until the predetermined water content is reached, but after that the decrease in water content is slow and jam-like stickiness is observed. It takes a long time to dry, and the appearance quality and flavor of the material to be dried are greatly impaired.
In this case, conventionally, a vacuum freeze dryer that requires high equipment costs was introduced to cope with it, but the surface of the object to be dried after drying was rustled, and the appearance shape was deformed. .
However, since the microwave vacuum dryer disclosed in
In addition, each room partitioned by multi-stage shelves is in full communication, and since each room is dried simultaneously using a single microwave irradiation device, the dry state of each room is Switching cannot be performed. Therefore, when drying a small amount and many kinds of to-be-dried materials, drying becomes inefficient.
In addition, in order to dry the fruit-containing fruit and the like without impairing the appearance quality and flavor, it is necessary to control the drying state with high precision. In the wave vacuum dryer and the above-described vacuum freeze dryer, the drying control state cannot be switched according to the type and properties of the material to be dried or the progress of drying.
The present invention has been made based on such points, and the object of the present invention is to turn on / off microwave drying for each individual drying chamber according to the type and properties of the object to be dried or the progress of drying. Is to provide a microwave vacuum dryer and a microwave vacuum drying method capable of drying at low cost with high accuracy.

Further, a drying method using the microwave vacuum dryer according to
Moreover, the drying method using the microwave vacuum dryer according to
The following actions can be obtained by the above means. First, the vacuum drying furnace is partitioned in a state where the leakage of microwaves is shielded, and a plurality of individual drying chambers are provided, and a microwave irradiation device and a turntable are arranged for each individual drying chamber. Vacuum drying with microwaves becomes possible.
Accordingly, it is possible to execute the drying by assigning the individual drying chamber that performs vacuum drying by the microwave and the individual drying chamber that does not perform the drying according to the type and property of the object to be dried, the progress of the drying, or the like.
In addition, since a temperature sensor is provided in each individual drying chamber, the product temperature of the object to be dried accommodated in each individual drying chamber during drying can be grasped as needed. It can be used to control the dry state.
Further, since the drying state of the object to be dried can be controlled by the control unit based on the product temperature of the object to be dried, the microwave output from the microwave irradiation device and the oscillation time of the microwave, It becomes possible to control the dry state with high accuracy corresponding to the type and properties of the dried product.
In addition, when a double-choke integrated seal structure is disposed between the opening of the vacuum drying furnace and the open / close door, microwave leakage to the outside of the seal structure is at a high level and in a high-frequency circuit manner. Will be prevented.
In addition, when each individual drying chamber is configured to be partitioned by a partition plate, microwaves oscillated in each individual drying chamber are reflected by the partition plate to prevent leakage of the microwaves outside the individual drying chamber. It becomes possible.
In addition, when a double choke integrated seal structure is provided at the front edge of each partition plate, microwave leakage between the individual drying chambers is prevented at a high level in a high-frequency circuit manner. Become.
In addition, when the trays are provided below the tray and on the upper surface of the partition plate, it is possible to prevent the moisture or powder that has flowed out of the tray from adhering to the upper surface of the turntable or the individual drying chamber wall surface, thereby facilitating maintenance.
In addition, when a reflecting plate is provided above the tray so that the front end side is disposed downward and reflects the microwave irradiated from the microwave irradiation device, the microwave is uniformly distributed on the object T on the tray T. It is dried to prevent uneven heating.
Further, when the rotary shaft extending downward from the center of the lower surface of each turntable is driven to rotate by a single drive motor, the rotation of the drive motor and the output shaft of the drive motor is transmitted to the rotary shaft. Since the number of power transmission mechanisms is small, it is possible to reduce the number of parts and to keep the parts cost and product cost low.
In the control unit, the microwave output and the microwave oscillation time are set in a plurality of steps, and the microwave output is decreased step by step from the first step to the last step. When the time / output control method is used to control the dry state of the dried product, it is always compared with the conventional drying method that irradiates the microwave with a predetermined microwave oscillation time with the same microwave output. Thus, it becomes possible to control the drying state with higher accuracy according to the type and properties of the object to be dried or the progress of drying. Moreover, efficient drying can be performed in a short drying time while keeping the product temperature of the material to be dried relatively low.
Further, the control unit sets the product temperature of the object to be dried and the oscillation time of the microwave, performs PID control based on the product temperature of the object to be dried, and sets the microwave output to the product temperature of the object to be dried. When performing a product temperature control method that controls in proportion to the change and further corrects the value by integral control and differential control, the microwave always has the same size as in the time / output control method described above. Compared with conventional drying methods that irradiate microwaves with a predetermined microwave oscillation time at the output, it is possible to control the drying state with higher accuracy in consideration of the type and properties of the object to be dried or the progress of drying. Become. Moreover, efficient drying can be performed in a short drying time while keeping the product temperature of the material to be dried relatively low.
In the control unit, after the primary drying is performed by the time / output control method or the product temperature control method, the secondary drying is performed by using the dehumidifying dryer, and the dehumidifying combined drying method is performed to obtain the target moisture content. In such a case, it is possible to execute drying that gives priority to the appearance quality and flavor of the dried object after drying, and it is possible to perform highly accurate drying with more flexibility that suits the user's purpose. .
According to the microwave vacuum dryer and the drying method using the microwave vacuum dryer of the present invention, it is possible to process a large amount of material to be dried at one time, and the type and property of the material to be dried, or the progress of drying, etc. Accordingly, it is possible to switch on and off the microwave drying for each individual drying chamber.
In addition, by switching the control method of the drying state performed by the control unit, the drying object suitable for the purpose of the user can be dried at a low cost and with high accuracy according to the type and properties of the object to be dried or the progress of drying. It becomes possible to execute.

Next, the contents and results of the microwave heating test in which the case without the reflector and the case with the reflector are compared in order to test the effect of the reflector will be described with reference to FIGS. In this test, nine containers containing water were placed diagonally on a square tray T, which were set on the
The test results are as shown in FIGS. 14 to 17. In the case without a reflector, the temperature difference is 8.34 ° C. at the center and one outside of one diagonal line, whereas when the reflector is present.
Next, the drying method of the present invention that is executed by using the
That is, in the present embodiment, the
Among them, according to the drying method according to the time / output control method, the microwave output and the oscillation time of the microwave are set in a plurality of steps, and the microwave output is sequentially performed from the first step to the last step. It sets so that it may become low in steps, and the drying state of the to-be-dried object A is controlled.
For example, a strawberry with an initial mass of 608 g, an initial moisture content of 90.06% (547.6 g), an initial microwave output of 360 W, an air flow introduction amount of 3.0 l / min, a pressure of about 3.0 KPa or less, a turntable Considering the case of drying under reduced pressure while keeping the product temperature at 40 ° C. or less under the drying condition of 3 rpm with the rotation speed of 37 left, the drying curve at this time is as shown in FIG.
Also, the process of the time / output control method is divided into three. The microwave output of the first process is 360 W, the oscillation time of the microwave is 60 minutes, the microwave output of the second process is 300 W, and the oscillation time of the microwave is FIG. 19 shows a drying control curve when the microwave output of the third step is set to 260 W and the microwave oscillation time is set to 30 minutes for 30 minutes.
In FIG. 19, a fourth step is provided to further check the temperature rise, and the microwave output of the fourth step is set to 200 W and the oscillation time of the microwave is set to 90 minutes.
As is apparent from the graph of FIG. 19, the product temperature of the material to be dried A is maintained at around 36 ° C. until the drying time of the first to third steps is 120 minutes, and a good dry state is maintained. On the other hand, if the drying is further continued and the process proceeds to the fourth step, the product temperature gradually rises and finally reaches about 70 ° C. when the drying time is 210 minutes. In drying A, it can be said that it is desirable to finish the drying up to the third step.
On the other hand, according to the drying method according to the product temperature control method, the product temperature of the object to be dried A and the oscillation time of the microwave are set, and P (Proportional) I (Integral) is set based on the product temperature of the object to be dried A. ) D (Derivative) control is performed, the microwave output is controlled in proportion to the change in the product temperature of the material A to be dried, and the value is corrected by integral control and differential control.
For example, the drying control curve when the set product temperature is 40 ° C. under the same drying conditions as described above is as shown in FIG. In FIG. 20, the microwave output immediately after the microwave oscillation becomes high due to the action of PID control, and the microwave output decreases after the product temperature reaches the set value of 40 ° C. Thereafter, the degree of drying of the material to be dried A proceeds with time, and the product temperature is kept constant, so that the microwave output gradually decreases.
And in the case of the said drying conditions, as an example, it is desirable to complete | finish drying when the drying time reaches about 160 to 180 minutes.
As described above, according to the present embodiment, it is possible to process a large amount of the material A to be dried at a time, and the micros for each

In addition, as the hygroscopic desiccant S used in the present embodiment, bead-shaped silica gel widely used as a desiccant for foods and the like that dislike moisture can be applied as an example. Silica gel is a physical desiccant mainly composed of silicon dioxide, and the substance is not changed by a chemical reaction or the like, and dehumidification is performed by adsorbing water vapor into the pores of the silica gel.
Silica gel has excellent moisture absorption ability, is safe, is relatively inexpensive and can be regenerated by heating, and is also economical.
Next, the drying method of the present invention that is executed by using the
That is, in the present embodiment, the
In this case, the microwave single drying method is selected when the target moisture content G2 of the material to be dried A is relatively high, and the dehumidifying combined drying method is selected when the target moisture content G2 of the material to be dried A is relatively low. It is possible to do so.
Specifically, when drying of the material to be dried A is performed by selecting the time / output control method, the microwave single drying method is selected if the drying time is up to about 120 minutes, and the drying time is set to 120. When it is desired to take a longer time, it is possible to select the dehumidifying drying method so as to prevent an increase in the product temperature of the material A to be dried, which affects the finish of the material A to be dried.
On the other hand, when the product temperature control method is selected and drying of the material A to be dried is performed, the microwave output decreases with a decrease in the moisture content, and the product temperature of the material A to be dried is also maintained at a predetermined set value. ing.
Therefore, any control method of the microwave single drying method or the dehumidifying combined drying method may be employed. In this case, the drying is terminated based on a drying timer, a decrease degree of the microwave output, or the like.
Also with the
In addition, the

Further, the
Further, in the time / output control method employed in the drying method of the present invention, the number of steps can be varied, and the number can be made smaller than the number employed in the embodiment, or the number of steps can be increased to increase the number of steps. It is possible to set the microwave output to be further reduced in multiple steps or continuously by shortening the wave oscillation time.
In addition, the configuration and layout of the
In addition, the dehumidification start moisture content G1, the target moisture content G2, the set value of the product temperature, etc. of the material to be dried A can also be changed as appropriate according to the type and properties of the material to be dried A to be dried. .
The microwave vacuum dryer and the drying method using the microwave vacuum dryer of the present invention can be used in the production and use fields of various dried foods and the like.
