本発明は、(A)天然香料類、(B)エステル類、(C)アルコール類、(D)アルデヒド類、(E)ケトン類、(F)フェノール類、(G)エーテル類、(H)ラクトン類、(I)炭化水素類、(J)含窒素及び/又は含硫化合物類、(K)酸類の(A)〜(K)からなる群より選ばれる1種又は2種以上の香料を含むことを特徴とするシトラス様香料組成物、及び、該シトラス様香料組成物を含む食品に関する。

より詳細には、本発明は、例えば飲料、冷菓、デザート、菓子、調味料などの食品に清涼感、爽快感を有し、快適な使用感を付与することができ、また、上記食品の原材料、例えば着色料、苦味料、甘味料、調味料、酸化防止剤、酸味料、保存料、強化剤、増粘安定剤、乳化剤、溶剤、ガムベース、油脂、光沢剤などの香味(渋味、苦味、甘味、塩味、酸味、粉っぽさ、金属味など)の改善、原材料の匂い(脂肪臭、醗酵臭、焦げ臭、酸臭、薬品臭、金属臭などの悪臭)のマスキングなどに有効で、持続性があり且つ液性が酸性あるいは塩基性領域で安定であり、上記食品の原材料の作用・機能を阻害することのない優れた嗜好性を有するシトラス様香料組成物および該香料組成物を含有する食品に関する。

【発明が解決しようとする課題】
しかしながら、上記従来提案のシトラス様香料組成物は、食品に使用されている原材料が有する特異臭のマスキング、原材料の香味の改善、清涼感、爽快感など嗜好性の面で必ずしも満足できるものではなく、改善されたシトラス様香料組成物の開発が望まれている。

従って、本発明の目的は、嗜好性および持続性が高く、且つ食品の原材料の香味の改善、特異臭のマスキングに効果があり、酸性あるいは塩基性領域でも安定で食品原材料の作用・機能を阻害することのないシトラス様香料組成物ならびに該香料組成物を含有する食品を提供するにある。
さらには、本発明の目的は、殺菌・抗菌・防腐、酸化防止、変色防止、紫外線吸収、アロマテラピーなどの作用・機能を期待できるシトラス様香料組成物を提供するにある。

【課題を解決するための手段】
本発明者は、上記の如き課題を解決すべく、特定の(A)天然香料類、(B)エステル類、(C)アルコール類、(D)アルデヒド類、(E)ケトン類、(F)フェノール類、(G)エーテル類、(H)ラクトン類、(I)炭化水素類、(J)含窒素及び/又は含硫化合物類、(K)酸類の群から選ばれる少なくとも1種以上の天然もしくは合成香料を配合することにより、上記課題を解決できることを見出し本発明を完成するに到った。

【発明実施の形態】
本発明は、(A)天然香料類、(B)エステル類、(C)アルコール類、(D)アルデヒド類、(E)ケトン類、(F)フェノール類、(G)エーテル類、(H)ラクトン類、(I)炭化水素類、(J)含窒素及び/又は含硫化合物類、(K)酸類の(A)〜(K)からなる化合物の群より選ばれる1種又は2種以上の化合物を含むことを特徴とするシトラス様香料組成物である。

本発明のシトラス様香料組成物は、スイートオレンジ、ビターオレンジ、ネロリ、マンダリン、プチグレン、ベルガモット、タンゼリン、温州ミカン、ダイダイ、ハッサク、イヨカン、レモン、ライム、グレープフルーツ、ユズ、スダチ、カボス、スウィーティー等の柑橘類特有の「さわやかでフレッシュなシトラス様」の香味を持つ特徴を有する。

本発明のシトラス様香料組成物に用いられる(A)天然香料類としては、例えば、スイートオレンジ、ビターオレンジ、ネロリ、マンダリン、プチグレン、ベルガモット、タンゼリン、温州ミカン、ダイダイ、ハッサク、イヨカン、レモン、ライム、グレープフルーツ、ユズ、スダチ、カボス、スウィーティーから選ばれる1種以上の天然香料を好ましく例示することができる。

また、上記の天然香料以外に、例えば、シトロネラ、エレミ、オリバナム、マジョラム、アンゲリカルート、スターアニス、バジル、ヘイ、カラマス、キャラウェイ、カルダモン、ペッパー、カスカリラ、ジンジャー、セージ、クラリセージ、クローブ、コリアンダー、ユーカリ、フェンネル、ピメント、ジュニパー、フェネグリーク、ローレル、メース、スギ、センキュウ、アーモンド、アップルミント、アニス、アルテミシア、アルファルファ、アンズ、アンブレット、イグサ、イチゴ、イチジク、イランイラン、ウインターグリーン、ウメ、エルダー、エンジュ、オークモス、オールスパイス、オリス、カーラント、カッシー、カモミル、ガランガ、カリン、ガンビア、グァバ、グーズベリー、クスノキ、クチナシ、クベバ、クミン、クランベリー、コーラ、サンショウ、サンダラック、サンダルウッド、サンダルレッド、シソ、シベット、ジャスミン、ショウガ、ジンセン、シンナモン、スターフルーツ、スチラックス、スペアミント、ゼラニウム、タイム、タバナ、タンジー、タンジェリン、チャンパカ、チュベローズ、ツバキ、ディタニー、トルーバルサム、トンカ、ナッツ、ナツメ、ナツメグ、ナンテン、ニアウリ、ニンジン、バイオレット、パイナップル、ハイビスカス、ハチミツ、ハッカ、パッションフルーツ、バニラ、バラ、ヒソップ、ヒノキ、フーゼル油、ブチュ、ペパーミント、ペピーノ、ベルベナ、ボアドローズ、ポポー、ボルドー、ボロニア、マツ、マンゴー、ミツロウ、ミモザ、ミルフォイル、ムスク、メープル、メリッサ、メロン、モモ、ラベンダー、リキュール、リツェア、リンデン、ルー、レンブ、ローズマリー、ロベージ等を本発明の香気・香味付与乃至改良剤として使用することもできる。これらの天然香料に含有されている香料成分の1種又は2種以上を使用することもできる。
