PREMESSA PREMISE
E' nota la tradizionale tecnica di vinificazione con macerazione. Essa, sostanzialmente, richiede un contenitore, in pratica un tino, all'interno del quale vengono immessi i grappoli d'uva integrali, alternativamente l'uva diraspata. Questa, dopo essere stata pigiata, viene lasciata in sito dando corso ad una prima fase di macerazione, nel corso della quale avviene la lisciviazione dei costituenti solubili delle bucce. Al termine del periodo di macerazione che richiede anche diversi giorni, si procede con la separazione del liquido libero dalle vinacce, il mosto, mediante un primo travaso. In questa condizione, essendo avviata la fermentazione, il liquido libero dalle vinacce, in pratica il mosto, interesserà prevalentemente la parte inferiore del tino, mentre superiormente tenderanno ad affiorare le bucce, sino a formare il cosiddetto cappello. Queste bucce, che compongono dunque la vinaccia, vengono poi torchiate ripetutamente, estraendo la parte liquida in esse contenuta. The traditional vinification technique with maceration is known. Queste ed altre condizioni non meglio specificate, da un lato partecipano a rendere le apparecchiature esistenti soggette ad una costante manutenzione, dall'altro incidono in maniera importante sui costi di gestione.
