Abstract

Procedimento per la cottura rapida di paste filamentari e simili, consistente nell'inviare acqua ad alta temperatura e sotto pressione in una camera di precottura termostatata mediante la stessa acqua ad alta temperatura, nell'alimentare in detta camera e tramite un dosatore, una porzione di pasta cruda unitamente ad acqua calda ed a tenervela per un tempo sufficiente al rammollimento della pasta, nell'inviare altra acqua calda nella camera di precottura per rimescolare, nel trasferire la pasta entro una camera termostatata di cottura finale e nell'eliminare l'acqua calda di cottura facendola circolare entro una pluralità di camere di decompressione prima di inviarla in uno scambiatore di calore associato alla tubazione di alimentazione dell'acqua.Apparecchiatura di cottura rapida atta a realizzare detto procedimento in modo automatico il cui ciclo operativo è regolato da un microprocessore o simile.
