Abstract

The method for processing fish of the dog fish variety consists, according to one arrangement of the invention, in: - placing the fish flat on its stomach, head first, at the intake station (6) of the processing installation; - gripping it by its eyes at said intake station 6, in order firstly to position it at the preparation station 9 where the fins and the skin behind the head will be cut off preparatory to cutting the fish up, and the stomach slit and the viscera removed, then secondly at the finishing station 180, where the head and tail will be simultaneously chopped off; - measuring its length during its transfer from the intake station 6 to the preparation station 9; - cutting the fish up during its transfer from the preparation station 9 to the finishing station 180. The processing installation for the implementation of the method may comprise: - an intake station 6 where the fish is positioned on a transfer belt 3, by means of indexing, - a preparation station 9 where the fins and skin are cut off, the stomach slit and the viscera removed, - and a finishing station 19 where the head and tail are separated from the rest of the body of the fish. <IMAGE> [EP0263738A1]
