Abstract
Low alcohol or alcohol free, wine based beverage is prepared as follows:- A highly purified basic urine of neutral character is concentrated to half of its original volume under reduced pressure, below 50 deg.C. The original volume is restored using softened water. A must concentrate is added to regulate the sugar concentration in order not to exceed permitted alcohol levels at a second fermentation stage when the mixture is inoculated with a special strain of yeast. Fermentation takes place in a closed vessel with an atmosphere of CO2. After cold treatment the beverage is filtered and bottled. - The units of an installation to produce such a beverage consists of; Heater, alcohol removing still, mixing vessel, water softener, regenerating refermentation tank, adjoining two stage staple plate filter, an intermediate cold-treating holder, bottling and attached pasteurising unit.
