Claims (1)
1. Postupak toplinskom obradom sterilizacije za očuvanje tinte mekušaca koleoidnih glavonožaca, naznačen time što obuhvaća sljedeće faze:
- homogenizacija i prva toplinska obrada (1) u reaktoru za pasterizacijsku obradu u kojoj se postiže temperatura od najmanje 70 °C tijekom više od 10 minuta, pri čemu se dodaje zgušnjivač,
- hlađenje (2) homogenizirane tinte u spremniku postavljenom na temperaturu ispod 30 °C i zadržavanje tinte u navedenom spremniku radi snižavanja temperature.
- postupak se nastavlja punjenjem, okretanjem, puhanjem limenki i označavanjem (3) datuma isteka,
- zatim se izvodi druga toplinska obrada (4) u autoklavu u kojoj se vrši toplinska obrada radi postizanja temperature sterilizacije veće od 110 °C tijekom vremena koje će ovisiti o količini koja se konzervira, i razini osiguranja sterilnosti koeficijenta fo> 6 koji osigurava odsutnost mikroorganizama,
pri čemu temperatura i vrijeme druge toplinske obrade variraju ovisno o količini koja se konzervira kako je definirano u sljedećoj tablici:
