Abstract
The herein presented hand made pasta is prepared with wild vegetables and home made materials (wheat flour and mountain wild vegetables). The wild vegetables should be boiled and mashed before being added to the sheeted dough; the resulted product will be cut with the hand and dried in a natural manner. Application: production of lasagne, chylopites (noodles) and trachanas with no preservatives.
