Abstract

A chocolate coating, free from the unpredictable development of soapy offflavour, for an edible food product comprises, in proportions by weight, 5-21% of a cocoa product, 26-38% of a hard butter prepared by hydrogenation of a lauric acid free corn oil, cotton seed oil, olive oil, palm oil, peanut oil, rice bran oil, soy bean oil or sunflower oil, which hydrogenation was preceded or followed by interesterification, and 41-69% of other ingredients including skim milk powder, emulsifier, sugar, salt and flavour. The preparation of the hard butter may involve esterification of fatty acids, excluding lauric acid, with glyerine. A dark sweet coating may include 14-21% cocoa, 26-38% hard butter and 41-60% other ingredients. A light sweet coating may include 5-12% cocoa, 26-38% hard butter and 50-69% other ingredients. An example is directed to producing a chocolate coating from cocoa, hydrogenated peanut oil, skim milk powder, emulsifier, sugar, salt and flavour in specified proportions. In comparative experiments, the hydrogenated peanut oil is replaced by hydrogenated coconut oil or by solid fat containing lauric acid.
