939,624. Making bread dough; de-gassing apparatus. BAKER PERKINS HOLDINGS Ltd. July 4, 1962 [July 4, 1961], No. 24168/61. Class 28 (1). In an apparatus for degassing a fermenting brew of water, yeast, yeast food and flour, the brew is admitted to a tank 1 through an inlet 2 and maintained at a steady level 15 by a float 9a and control switch 9. By means of holes 12, 13 at the top and bottom of a tube 4, which is extended to form a bottom outlet 3, and by providing an impeller 7 on a shaft 5 driven by a motor 6, the brew is circulated from tank to tube and back again, and at the same time by means of vertical rods 11 on a disc 10 secured to the shaft, a gas-releasing vortex 16 is created in the brew at the top of the tube 4. A constant flow of de-gassed brew is discharged through the outlet 3 and the apparatus may be used, for example, interposed between the transfer pump and metering pump of the apparatus described in Specification 934,255.
