Abstract

The ratio of glucose to fructose in invert sugar is altered by subjecting a 10 to 15% aqueous solution of invert sugar containing a nitrogen-containing nutrient to aerobic submerged fermentation at room or slightly elevated temperature by treatment with a species of Acetobacter capable of oxidising glucose to gluconic acid without attacking fructose. It is preferred to use Acetobacter suboxydans at a working temperature of 28 DEG C. with a 12 DEG brix invert sugar solution to which has been added Corn Steep Liquor, as a nutrient, for example in an amount of 0.5% by volume of the total sugar solution. This mixture is injected with finely dispensed filtered air until analysis of the substrate indicates a decrease in the glucose content to the required level and a corresponding increase in the content of gluconic acid. The process may be operated batchwise, or in an intermittent or continuous manner while intermittently or continuously removing a portion of the fermented solution and introducing an equivalent amount of the invert sugar solution containing the nutrient.ALSO:A soft drink contains an aqueous solution made by subjecting a 10 to 15% aqueous solution of an invert sugar containing a nitrogencontaining nutrient to aerobic submerged fermentation at room or slightly elevated temperature by treatment with a species of Acetobacter capable of oxidizing glucose to gluconic acid without attacking fructose. It is preferred to use Acetobacter suboxydans at a working temperature of 28 DEG C. with a 12 DEG brix invert sugar solution to which has been added corn steep liquor, for example in amount of 0.5% by volume of the total sugar solution. The mixture is injected with finely dispersed filtered air and the fermentation is stopped when the solution contains 16 to 20% by weight of fructrose, 10.5 to 13.5% of glucose and 2.7 to 3.9% by weight of gluconic acid. The fructose enriched solution may be treated with active carbon to remove undesired colour and flavour and the Acetobacter removed by passing the solution through a biological filter for example sterimats. Salts such as sodium gluconate and excess acids can be removed by passing the solution through ion exchange resins. The purified mixture may, if desired after concentration, be blended with flavours or fruit or vegetable juices, coloured and aerated and pasteurized before bottling.
