Abstract
Food in liquid form is charged under superatmospheric pressure with an inert gas, e.g. carbon dioxide or nitrogen, in which aromatic constituents of the food have previously been entrained, and the mixture so obtained is spray-dried to yield a free-flowing powder. According to an example, a fully aromatic, readily-soluble, dry raspberry powder is prepared by passing carbon dioxide, loaded with aromatic constituents of raspberries, under superatmospheric pressure into a 30% concentrate of raspberry juice and spray-drying. In a further example, the gases evolved upon the roasting of coffee beans were blown under superatmospheric pressure into a concentrated infusion of coffee beans and the mixture of coffee concentrate and roasting gases thus formed was spray-dried to yield a pulverulent coffee extract.
