Abstract

A sterile milk such as evaporated milk, whole milk, or cream, free from age-thickening, is produced by subjecting the milk to high-temperature, short-time sterilization, such as at 260 - 310 DEG F. for up to 5 minutes, and thereafter adjusting the salt balance of the sterilized product as by relatively increasing its divalent metal (calcium) ion concentration with respect to the monovalent metal (sodium and potassium) ion concentration. Sterilized, homogenised milk may be added to a can containing sterilized ion-exchange material and the can sealed, or the milk may be sterilized in a sealed can containing a liner of ion-exchange material coated with a substance which prevents the salt balance adjustment prior to and during sterilization. In cases where sodium citrate or sodium phosphate has been added to the milk prior to sterilization to stabilize the milk against heat coagulation, a larger amount of the ion-exchange material should be employed. In an example, sterilized evaporated milk was treated with 0,4% by weight of the milk of a strong acid cation polystyrene resin exchanger which in the sodium form had been treated with 15,1 g. anhydrous calcium chloride dissolved in 100 ml. distilled water per 100 ml. tamped volume of resin.
