Abstract

Tablets or pills which disintegrate and dissolve readily in coffee and tea contain 30-60 per cent of butter fat, 6-12 per cent of milk protein and at least 20 per cent of lactose. The preferred proportions are 45 per cent butter fat, 9 per cent milk protein and 41 per cent lactose. The milk protein comprises casein, lactalbumin and lactoglobulin. The tablets or pills may be made from a mixture of lactose and spray dried milk powder or from a mixture of lactose, a powder obtained by drying cream of at least .20 per cent fat content and a powder obtained by drying fat-free milk. Sweetening materials other than lactose may also be present.
