Apparatus (Figs. 1, 2 and 4) for smoking foods, e.g. meat, fish, sausages, cheese, comprises a smoke-house 10, a duct 18 for introducing smoke-air mixture alternately by the action of a reciprocable damper 53 to branches 31 and 32 and thence through nozzles 35 into the smoke-house, the duct 18 being long and wide for arresting sparks and the like, a smoke generator 69 adjacent to the smoke-house, a short, narrow duct 47 from the smoke generator to unit 17 which is provided with an impeller 19 for introducing air as required into the smoke, expelling used smoke as desired into a stack, and driving smoke-air mixture into the duct 18, and which is provided also with a heater for the smoke-air mixture, e.g. a ring gas burner 42 and, if desired, a steam injector 48, an exhaust duct 39 with a blower 64 for receiving gas from legs 61 and 62 in the smoke-house and transferring this gas to the unit 17, and an additional spark arrester on the duct 47. With the additional spark arrester of Fig. 9, the newly generated smoke is directed into contact with a continuous film of water supplied from a pipe 94 over a depending baffle 89. The smoke generator may comprise a hopper for combustible material, a feed control plate at the bottom of the hopper, a burning chamber below the feed control plate, and a horizontally rotatable agitator above and below the feed control plate.
