Abstract

The residue from the extraction from hops of the water-soluble alpha bitter acid is suspended in an aqueous alkaline solution and the suspension is oxidized so as to convert the beta bitter acid into water-soluble soft resin, the liquid being separated for addition to wort. Alternatively, the extraction residue whilst moist is oxidized and the soft resin is leached out with water or an aqueous alkaline solution. The reaction may be effected at a temperature of 70 DEG -80 DEG C and may be accelerated by irradiation with ultra-violet light or by the addition of an oxide or hydroxide of iron, copper, manganese, chromium, cobalt or nickel as a catalyst. In examples, (1) a suspension of washed spent hops in an aqueous solution of sodium hydroxide or carbonate, preferably of pH 9-11, is oxidized by blowing oxygen or air or other oxygen-containing gas mixture there-through or by strong agitation, the hop residue and insoluble hard resins formed as by-products being removed by straining, (2) spent hops are aerated or treated with oxygen or an oxygen-forming substance, e.g. hydrogen peroxide, while still moist on the hop strainer, then suspended in a sodium carbonate solution of pH about 9 and the solution strained off.
