Abstract

<PICT:0691291/III/1> Products in which the volatile flavours of plant extracts are concentrated at least 25-fold are obtained by vaporizing a part of the juice or the like to produce a vapour containing water vapour, the volatile flavours and non-condensible gases, removing water therefrom, and recovering the volatile flavours from the non - condensible gases. With the apparatus of the drawing, fruit juice is delivered from a container 1 into a vaporizer 5, where 5-25 per cent is evaporated, and into a vapour-liquid separator 7; therefrom the unvaporized juice is led, after cooling in 13 if desired, into a container 17, and the vapour led into a fractionating column 20; in this column the volatile flavours are concentrated by removal of water vapour, which is condensed and so drained off at 34; the concentrated vapour and non-condensible gases pass through a condenser 22 into a collecting chamber 24, from which a fraction of the condensate is passed to a cooler 41, the remainder back to the column 20, and the non-condensible gases to a cooler 40; the fraction of condensate is led to the top, and the cooled gases to the bottom, of a scrubbing tower 43, the resulting essence being collected in a receiver 48 and the gases being vented at 51 to the atmosphere.
