[Class 129] Apparatus for making infusions comprises a heat exchanger in which the water entering the boiler is preheated by the boiling water passing from the boiler to the infuser, the boiling water being simultaneously cooled. A pipe 39 through which the boiling water passes on its way to the infuser (not shown) is jacketed by an outer tube 36, through which the cold water from the mains passes. The flow to the infuser is controlled by an electromagnetic valve 81 which is closed by a float-operated mercury switch when the level of infusion in an urn supplied by the infuser reaches a predetermined level. The cold water supply is controlled by a floatoperated valve 42 of the type described in Specification 618,676. The supply of gas to the heater 4 is controlled both manually and in accordance with the steam pressure in the boiler.
