Abstract

Fruits are preserved by flowing a refrigerated solution containing sugar at a temperature of 10-20 DEG F. over the fruit to chill it to the freezing point, placing the fruit in containers with sugar or sugar syrup and storing at temperatures low enough to breeze the mass substantially solid.
