Abstract

To preserve fresh flavour in citrus fruits, especially oranges, and their juices, the peeled fruit is immersed in a cold liquid for a period sufficient to solidify the fruit and separate, by thermal shock, the juice cells from other parts of the peeled fruit. The peeled fruit, preferably subdivided into its segments, is dipped into, or sprayed with, liquid nitrous oxide at -128 DEG F., liquid nitrogen or liquid air, 9 sec. treatment with such nitrous oxide being sufficient, and agitation of the frozen sections then causes them to crumble into individual juice cells or aggregations of juice cells and pithy material, carpellary membrances and vascular bundles which may be sieved off. The juice cells separated may be stored in frozen condition. Separated juice cells may be thawed out and ruptured. The shock effect of the immersion may be reduced by preliminarily coating the peeled fruit or fruit segments with sugar solution.
