Abstract

Cuts of beefsteak, e.g., cuts of loin or round beef of 1 in thickness, are heated with fat or oil sufficiently to brown the surface but not to cook the cuts, are placed in containers with a hot gravy of meat juices, flour and seasoning such as celery, onions, salt and pepper, the containers are sealed and are then heated to effect at least partial cooking or partial sterilization of the cuts. Containers of incompletely cooked or sterilized cuts are stored under refrigeration until required for reheating and use. Insoluble barrier members, of, e.g., parchment paper may be interposed between the cuts in the container.
