Abstract
577,994. Evaporating corn syrup. CLEVELAND, F. J. (Granular Foods, Inc.) Sept. 3, 1943, No. 14451. [Class 32] [Also in Group VI] Dried corn syrup products having a moisture content of less than 2 per cent. and suitable for use as food products, caramel colouring and for admixture with fats, peanuts, coconut, soya bean, pecan and walnut flours and chocolate are obtained by heating liquid corn syrup under vacuum of not more than one and a half inches of mercury so that the syrup froths and a dried cellular product is obtained. With a corn syrup having a dextrose equivalent up to 42 a porous spongy friable cellular mass is obtained while when the dextrose equivalent is about 55 a hard cellular product is obtained which may be ground to give a product similar to granulated sugar. The drying is carried out in shallow trays 16, 17 supported on hollow shelves heated by hot fluids fed through pipes 13, 14 the trays being superposed in an evacuated chamber 10. A product suitable as a caramel colouring is obtained by subjecting corn sugar burnt in presence of a catalyst, e.g., ammonia to the above treatment.
