Treatment by damping or steaming.-A cereal food preparation is made by cooking grain in water under pressure, say 15 lbs., as in an ordinary steam-pressure cooker, adding cold water to swell the grain, submerging the product in vegetable oil, e.g. cocoanut oil, at a temperature of about 400‹ F. until the moisture is expelled, and the grain dried, and then removing excess of the oil by centrifugal action. Before submerging the grain in the oil excess of water in the grain is preferably removed by centrifugal action.
