503,928. Tendering meat. DIETZ, J. P. M. Oct. 14, 1937, No. 28001. [Class 28 (ii)] In a meat-tendering apparatus, the knifeguiding grid is arranged to tilt on its guides, when the knives are raised, and thus to become bound against upward movement until the knives leave the meat, when means connecting the knives and the grid operate to free the grid for upward movement with the knives. Two guide rods 6 are secured in bosses 5 and lugs 4 on the base 2 and standards 3, and the knife-carrying casting 8 and the casting 18 carrying the grid are provided with sleeves 9, 19 slidable on the rods. The sleeves 9 are long to prevent tilting of the casting 8 and the sleeves 19 are relatively short to permit tilting of the casting 18 and consequent binding on the rods 6. The casting 18 carries a pair of studs 26 which pass through holes in the casting 8, so that when the knives are raised, the grid is suspended from the knife assembly. The nuts 27, 28 are adjustable. The lever 1 is pivoted at 13 to the casting 8 and its fulcrum 15' is on a link 16 pivoted at 17 to the standards 3. A spring 14 tends to keep the knives raised, and 'the extent of lowering of the knives is determined by nuts 33, 35 on a rod 31 pivoted to the base and passing through an eye-member 32. The upward movement of the knives is limited by a stop 29 against which the casting 18 abuts. The knives are secured in the casting 8 by a part 11 fastened by knurled nuts 12. The guiding grid is in the form of a comb 20, then root part 21 of which is drilled to pass over a pair of studs 22 having knurled retaining nuts 23. The points 24 of the guide bars are tapered to enable them to pass easily between the knives and are bevelled to fit in a recess 25 in the casting 18. In operation, the meat is placed on a slidable and/or rotatable board 30, and the lover 1 is depressed. The grid rests on the meat and the knives project therethrough into the meat. The lever 1 is then raised, and the meat tending to rise tilts the grid which is thus bound on the rods 6. The knives are thus freed from the meat, and the grid remains locked until it is freed by the studs 26 when the nut 27 is engaged by the casting 8.
