340,297. Testing flours. HANKOCZY, E. DE, Kis Rokus Ucca, Budapest. Aug. 29, 1929, No. 26268. [Class 58.] To adjust the most desirable proportion of water and flour in mixing dough a sample of dough found to be of suitable consistency is placed in a miniature kneading machine and its resistance to kneading, or the power used in kneading the sample, measured. A known quantity of flour of the class in question is then kneaded in the machine with a known but insufficient quantity of water and water is added in small known amounts until the resistance or the power absorbed in the kneading machine reaches that noted in the test of the standard sample. The correct quantity of water for a known weight of flour is thus determined. A suitable dynamometer for use in determining the power absorbed comprises a casing 8 adapted to couple a driving shaft 3<1> to the kneading machine shaft 1<1> through spiral spring connections 6, 7. Relative angular displacement of the shafts is registered by a pointer 4 moving over a scale 5 and actuated by a connection to a bevel wheel 11 turned by the differential movement of shafts actuated by pinions 9<1>, 10<2>, connected to pinions 9, 10, on the kneading machine shaft and the power shaft respectively. Reference has been directed by the Comptroller to Specifications 16389/89 and 6784/91, [both in Class 58, Grain &c.].
