Abstract

Vinegar. - In manufacturing vinegar the liquid to be fermented is contained in a pair of intercommunicating tanks c the upper two thirds of each of which is filled with suitable porous material a supported by perforated partitions b. Compressed-air pipes e, vents f, h, and a connecting-pipe g, all having cocks, are provided. In use, compressed air admitted to one tank is employed to force the liquid into the porous material a in the other tank, this tank being open to the atmosphere. The cock in the pipe g is then opened and the liquid allowed to drain down and to ferment in the lower portions of the tanks, the vents h being open. The process is then repeated by forcing the liquid into the upper portion of the other tank. This complete process is carried out once every twentyfour hours for from twenty-four to twenty-eight days.
