Abstract

A decontamination method suitable for removing microbial content from the surface of food product. Food product 18 is moved through a spraying region 30 in which liquid is sprayed onto the food product in order to soak exposed surfaces of the food product without substantial agitation or deflection of the food product. A dewatering phase 38 takes place after the spraying phase, wherein liquid is actively removed from the food product, for removing microbial content in suspension from the surface of the food product. Spray nozzles 32 may be used to supply liquid at low pressure and high volume, in the form of a cone of fine particles of liquid. The rate of spraying and of movement of the food is controlled to prevent immersion of the food product. The method may include multiple washing cycles, and is moved between cycles by a conveyor 26. The dewatering may be achieved by suction.

Description

Methods and apparatus for washing food product The present invention relates to methods and apparatus for washing food product, in particular, but not exclusively, to methods and apparatus for washing delicate food product, such as salad leaf or herbs and the like.
Food product such as pre-packaged herbs, salads, sliced vegetables and fruits are commonplace in supermarkets. Typically, the food product undergoes a washing operation prior to packaging.
In the case of salad leaf and other delicate food products, it is known to immerse the unwashed product in a bath of water in order to displace unwanted soiling and microbial material from the surface of the product. After washing, the food product is removed from the bath. It is then common for a drying or de-watering operation to be canied out, to remove excess water from the surface of the washed food product.
Tests have shown that unwanted microbial content which is displaced from the food product as a result of the washing operation has the ability to re-attach itself to the surface of the food product, e.g. if the food product is left in the water bath for a prolonged period of time.
Hence, there is a need for a new method and/or apparatus for washing food product that overcomes or reduces the effects of this problem.
According to one aspect of the invention there is provided a method as set forth in claim 1.
According to another aspect of the invention there is provided an apparatus as set forth in claim 19.
A further aspect of the invention provides a method for washing delicate food product such as herbs and salad leaf, wherein the food product is conveyed through a spraying region in a non-agitated and non-immersed state whilst being subjected to a spraying operation in which liquid is sprayed onto the food product at low pressure and high volume, in order to soak exposed surfaces of the food product without substantial deflection of the food product as a result of the spraying operation, so that liquid from the spraying operation is carried by the food product, for promoting displacement of microbial content from the surface of the food product into suspension in the liquid carried by food product, and wherein the method includes a subsequent dewatering phase for removing the microbial content in suspension from the surface of the food product immediately after the food product has been conveyed through the spraying region.
Other aspects and features of the invention will be apparent from the attached claims and the following description of preferred embodiments, made by way of example only with reference to Figure 1, which is a schematic side view of a preferred apparatus for washing food product.
The washing apparatus, indicated generally at 10 in Figure 1, is used to wash the food product, with the intention to remove microbial contaminant and other unwanted content from the surface of food product, e.g. herbs, salad leaf, sliced vegetables and fruits.
In preferred embodiments, the apparatus may include means for carrying out a pre-washing phase, for the purpose of removing loose and heavy contaminant from the food product, e.g. using conventional immersion washing techniques.
In this illustrated embodiment, the pre-washing phase is carried out using a conveyor 12 mounted in a bath 14 of liquid 16, e.g. water. Typically, the food product 18 will be placed at an inlet end 20 of the bath 14, in order for it to then be carried on a moving surface 22 of the conveyor 12 in a submersed or substantially submersed state within the liquid in the bath 14.
As shown, the conveyor 12 may include an inclined end portion 24 configured for calTying the food product 18 up and out of the bath 14 on its moving surface 22, thereby allowing excess liquid to drain down from the surface of the food product 18.
The apparatus 10 is configured for subjecting the food product 18 to a spray washing phase, e.g. after the pre-washing phase.
In the illustrated embodiment, the food product 18 is discharged from the pre-washing conveyor 12 onto a spray washing conveyor 26, and is carried by a moving surface 28 of the spray washing conveyor 26 through a spray washing region 30. The spray washing region 30 includes a plurality of nozzles 32, which are arranged to spray liquid down onto the conveyor 26 under pressure.
The purpose of the spray washing region 30 is to soak the food product 18 on the conveyor 26 with liquid from the spray nozzles 32, in order to send microbial content on the surface food product 18 into suspension in the liquid from the spray nozzles 32.
The moving surface 28 of the conveyor 26 is preferably perforated, so that excess liquid on the food product 18 is free to wash down through the conveyor 26, and carry with it dispersed microbial content from the food product 18. However, in exemplary embodiments, the apparatus 10 is not configured to force a flow of liquid through the conveyor. In exemplary embodiments, the purpose of the spraying region 30 is to soak the exposed surfaces of the food product with liquid from the nozzles 32, in order to promote the dispersal of microbial content on said surfaces into suspension in the liquid from the spray nozzles 32.
In the illustrated embodiment, a drip tray 34 is provided below the spray washing conveyor 26, for collecting excess liquid as it passes down through the conveyor 26.
Advantageously, the spray nozzles 32 are arranged and/or configured to achieve complete coverage of the section of conveyor 26 immediately below the spraying region 30 (and, hence, any food product 18 on said section of conveyor 26).
Preferably, the spray nozzles 32 are arranged and/or configured to provide an equal distribution of liquid under pressure down onto the subjacent section of the spray washing conveyor 26.
The pressurised liquid from the spray nozzles 32 is preferably controlled to minimise or avoid deflection of the food product on the subjacent section of the spray washing conveyor 26. This is of particular importance when spraying delicate food product such as herbs and salad leaf, in order to avoid damage to the food product. Hence, it should be understood that, for preferred embodiments, especially those intended for spraying delicate food product such as herbs and salad leaf, the apparatus 10 is configured to avoid significant deflection of the food product 18 as it passes through the spraying region 30. Rather, the apparatus 10 is configured for soaking the exposed surfaces of the food product with liquid from the nozzles 32 as it passes through the spraying region, in order to promote the dispersal of microbial content on said surfaces into suspension.
The nozzles are preferably configured to spray a cone of fine particles of liquid under pressure onto the conveyor 26, to provide complete coverage for the section of the moving surface that is immediately below the nozzles with only minimal disturbance to the food product on said conveyor.
The nozzles are preferably controlled to spray water at low pressure (e.g. 1 bar) and high volume (e.g. delivering in the region of 0.4-1.0 litres of water per minute, per nozzle). The use of low pressure spraying minimises disturbance of the food product, reducing the risk of the product being damaged during the spray washing phase. The use of a high volume of liquid ensures that exposed surfaces of the food product are soaked with liquid, increasing the likelihood of microbial content on the food product will be displaced into suspension as the food product passes through the spraying region 30.
The rate of spraying and the rate of movement of the food product 18 on the conveyor 26 is preferably configured so that the food product 18 is not immersed in a body of water as it passes through the spray region 30.
In exemplary embodiments, there is no active operation to withdraw or disperse liquid from the food product as it passes through the spraying region. Nor is there any active operation to deflect or otherwise physically disturb the food product as it passes through the spraying region. For preferred embodiments, especially those intended for spraying delicate food product such as herbs and salad leaf, it is preferable for the food product to pass through the spraying region in a non-agitated state, so that the exposed surfaces can be soaked with liquid, for promoting the dispersal of microbial content on the food product into suspension.
A dewatering phase is carried out after the spray washing phase, e.g. after microbial content has had an opportunity to be dispersed into suspension during the spray washing phase. In order to reduce the risk of displaced microbial content in suspension from re-attaching to the surface of the food product 18, the dewatering phase preferably takes place immediately after the spray washing phase, e.g. within a few seconds of the food product passing beyond the spraying region 30, most preferably whilst the food product is still on the moving surface of the conveyor 26.
In exemplary embodiments, the apparatus 10 includes a dewatering arrangement, which is provided immediately adjacent the downstream end of the spraying region 30, e.g. within 0.0 to 0.5 metres of the end of the spray washing region 30 In the illustrated embodiment, the dewatering arrangement consists of a suction arrangement including a vacuum 36, for sucking excess liquid from the exposed surfaces of the food product. The suction arrangement has an inlet 38 positioned immediately below the moving surface 28 of the conveyor 26, downstream from the spraying region 30, so as to suck down through the moving surface 28 of the conveyor 26 and remove excess water and microbial content in suspension from the food product 18 after it has passed through the spraying region 30. The inlet 38 is provided within 0.0 to 0.5 metres from the downstream end of the spraying region 30.
Other dewatering methods may be used, such as conventional bouncing or blowing techniques of the kind commonly used for dewatering leaf-type food product.
However, in each case it is preferred that the dewatering phase takes place immediately after the spraying phase, for promoting the dispersal of microbial content on the food product into suspension before actively seeking to remove the liquid from the food product.
The food product 18 is preferably discharged from the conveyor 26 after the dewatering phase. Most preferably, the food product is discharged onto a further conveyor 40 having the same or similar spray washing and dewatering phases, in order to further reduce the microbial content on the food product. A separate washing stage (e.g. using an immersion tank) may be carried out between the conveyor 26 and the subsequent conveyor.
In the illustrated embodiment, the food product 18 undergoes multiple wash cycles, each cycle including a spray washing phase and a dewatering phase of the kind described above with reference to Figure 1. The use of multiple (preferably consecutive) spraying and de-watering phases (e.g. as illustrated), has been found to be particularly effective in reducing the level of retained microbial content on the surface of the food product, whilst at the same time maintaining the structural integrity of delicate food product such as salad leaf and the like.
To reduce the size of the apparatus 10, each wash cycle may take place on a separate conveyor 26, 40, 42 arranged one above another. Liquid from the three drip trays 34 is collected by a pump 44. In other embodiments, the multiple wash cycles may take place along a single conveyor.
Preferably, the food product 18 is displaced (e.g. by allowing it to fall! roll under gravity, or through agitation) between each dewatering phase and subsequent spray washing phase, in order to displace excess water from the surface of the food product.
The specific use of liquid sprayed onto food product in order to soak exposed surfaces of the food product and promote displacement of microbial content from the surface of the food product into suspension without physical agitation of food product, followed by a subsequent dewatering phase for removing the microbial content in suspension from the surface of the food product has been found to provide a significant improvement in decontamination of delicate food products, such as herbs and salad leaf, whilst avoiding or mininlising damage to the product.

Claims (40)

  1. Claims 1. A decontamination method for removing microbial content from the surface of food product, the method including a spraying phase wherein food product is moved through a spraying region in which liquid is sprayed onto the food product in order to soak exposed surfaces of the food product with liquid without substantial agitation or deflection of the food product, so that sprayed liquid is canied by the food product for promoting displacement of microbial content from the surface of the food product into suspension, and wherein the method further includes a dewatering phase which takes place after the spraying phase, wherein liquid carried by the food product is actively removed from the food product as the food product moves beyond the spraying region, for removing microbial content in suspension from the surface of the food product after said spraying phase.
  2. 2. A method according to claim 1 wherein spray nozzles are used to supply liquid under pressure onto the food product during the spraying phase.
  3. 3. A method according to claim 2 wherein the supply of liquid is controlled to minimise or avoid deflection of the food product during the spraying phase.
  4. 4. A method according to claim 2 or claim 3 wherein the food product is moved on a conveyor and the spray nozzles are used to provide an equal distribution of liquid under pressure to cover a section of the conveyor within the spraying region.
  5. 5. A method according to any of claims 2 to 4 wherein the spray nozzles spray a cone of fine particles of liquid onto the food product during the spraying phase.
  6. 6. A method according to any of claims 2 to 5 wherein the spray nozzles are controlled to spray liquid at low pressure and high volume.
  7. 7. A method according to any preceding claim wherein the rate of spraying and the rate of movement of the food product through the spraying region is controlled to prevent the food product from being immersed in a body of water as it passes through the spray region.
  8. 8. A method according to any preceding claim wherein the method includes multiple washing cycles, each washing cycle including a spraying phase and a subsequent dewatering phase in accordance with claim 1.
  9. 9. A method according to claim 8 wherein the food product is displaced between each washing cycle, to displace excess liquid from the surface of the food product after the dewatering phase of a first washing cycle and before the spraying phase of a second washing cycle.
  10. 10. A method according to claim 8 or claim 9 wherein the food product is transported on a conveyor for a first washing cycle and is deposited onto a second conveyor for a subsequent washing cycle.
  11. 11. A method according to any preceding claim wherein the dewatering phase is carried out immediately after the spraying phase.
  12. 12. A method according to any preceding claim wherein the food product is conveyed from a first location to a second location and said spraying phase and said dewatering phase take place while the food product is between said first and second locations.
  13. 13. A method according to claim 12 wherein the food product is moved between said first location and said second location on the moving surface of a conveyor.
  14. 14. A method according to claim 13 wherein the moving surface of the conveyor is porous to allow sprayed liquid to drain through the conveyor.
  15. 15. A method according to claim 14 wherein the dewatering phase includes a suction operation for sucking liquid from the food product down through the porous moving surface of the conveyor.
  16. 16. A method according to any of claims 12 to 15 wherein the spraying phase is carried out using an array of spray nozzles, for spraying liquid under pressure onto an upper surface of the conveyor, and the dewatering phase involves a suction arrangement provided below the conveyor downstream of the array of spray nozzles, for sucking excess liquid down through the conveyor after the food product has passed beneath the array of spray nozzles as it moves between said first and second locations.
  17. 17. A method according to claim 16 wherein said suction arrangement is located within a range of 0.0 metres to 2.0 metres downstream from the array of spray nozzles.
  18. 18. A method according to any preceding claim, the method including a pre-wash phase wherein the food product is immersed in a body of liquid and then removed from a state of immersion prior to the spraying phase.
  19. 19. Apparatus for washing food product, the apparatus including a moving surface for transporting food product from a first location to a second location, a spray arrangement for spraying liquid onto the food product during transit from said first location to said second location to displace microbial content from the surface of the food product into suspension, and a dewatering arrangement provided downstream of the spray arrangement between said first and second locations, for removing liquid from the surface of the sprayed food product and removing microbial content in suspension from the surface of the food product after it has passed beneath the spray arrangement.
  20. 20. Apparatus according to claim 19 wherein the moving surface forms part of a conveyor for transporting the food product from said first location to said second location.
  21. 21. Apparatus according to claim 19 or claim 20 wherein the spray arrangement includes an array of spray nozzles arranged to supply water under pressure onto the food product during transit between said first and second locations and wherein the dewatering arrangement is provided below the food product, downstream of the spray alTangement.
  22. 22. Apparatus according to claim 21 wherein the dewatering arrangement is located within a range of 0.0 metres to 2.0 metres downstream from the array of spray nozzles.
  23. 23. Apparatus according to any of claims 19 to 22 wherein the moving surface is porous to allow sprayed liquid to drain through the moving surface.
  24. 24. Apparatus according to claim 23 wherein the dewatering arrangement includes a suction arrangement located for sucking liquid from the food product down through the porous moving surface.
  25. 25. Apparatus according to claim 24 wherein the suction arrangement has an inlet provided within a range of 0.0 metres to 2.0 metres downstream from the array of spray nozzles.
  26. 26. Apparatus according to claim 25 wherein the inlet extends in a direction perpendicular to the direction of travel of the moving surface.
  27. 27. Apparatus according to any of claims 19 to 26 wherein the apparatus is configured for carrying out multiple washing cycles, each washing cycle including a spraying phase in accordance with claim 1 and a dewatering phase in accordance with claim 1.
  28. 28. Apparatus according to claim 27 wherein the apparatus is configured to displace the food product between each cycle, for displacing excess water from the surface of the food product after the dewatering phase of a first cycle and before the spraying phase of a subsequent cycle.
  29. 29. Apparatus according to claim 28 including a first conveyor for a first cycle and a second conveyor for a subsequent cycle.
  30. 30. Apparatus according to claim 29 configured so that food product is deposited from the first conveyor onto the second conveyor for the subsequent cycle.
  31. 31. Apparatus according to claim 30 wherein the first conveyor is mounted above the second conveyor, and the apparatus is configured so that the food product travels in a first direction between said first and second locations in said first cycle, and then travels in the opposite direction beneath the first conveyor in said subsequent cycle.
  32. 32. Apparatus according to any of claims 19 to 31 wherein the apparatus includes a spraying region for carrying out a spraying phase to spray liquid onto the food product in order to soak exposed surfaces of the food product with liquid, wherein the spraying region includes means for controlling the spraying phase to minimise or avoid agitation or deflection of the food product, so that sprayed liquid can be carried by the food product as it passes through the spraying region, for promoting displacement of microbial content from the surface of the food product into suspension.
  33. 33. Apparatus according to any of claims 19 to 32 wherein the spraying region includes spray nozzles for supplying liquid under pressure onto the food product during the spraying phase.
  34. 34. Apparatus according to claim 33 wherein the spray nozzles are provided to supply an equal distribution of liquid under pressure to cover a section of the conveyor within the spraying region.
  35. 35. Apparatus according to claim 33 or claim 34 wherein the spray nozzles are configured for spraying a cone of fine particles of liquid onto the food product during the spraying phase.
  36. 36. Apparatus according to any of claims 33 to 35 including means for controlling the spray nozzles for spraying liquid at low pressure and high volume.
  37. 37. Apparatus for carrying out the method according to any one of claims 1 to 18.
  38. 38. A method of washing food product using an apparatus according to any one of claims 19 to 36.
  39. 39. A method for washing delicate food product such as herbs and salad leaf, wherein the food product is conveyed through a spraying region in a non-agitated and non-immersed state whilst being subjected to a spraying operation in which liquid is sprayed onto the food product at low pressure and high volume, in order to soak exposed surfaces of the food product without substantial deflection of the food product as a result of the spraying operation, so that liquid from the spraying operation is carried by the food product as the food product passes through the spraying region, for promoting displacement of microbial content from the surface of the food product into suspension in the liquid carried by food product, and wherein the method includes a subsequent dewatering phase for removing the microbial content in suspension from the surface of the food product immediately after the food product has been conveyed through the spraying region.
