Abstract

1502961 Seasoning compositions 'AJINOMOTO CO INC 18 March 1975 [18 March 1974] 11164/75 Heading A2B A seasoning composition comprises an extract from a yeast antolysate, a 5'-nucleotide, 5 to 20% sodium chloride, and one or more potassium salts in an amount such that [K<SP>+</SP>] is at least 0.5 times [Na<SP>+</SP>]. The amount of 5'- nucleotide may be 0.5 to 4% by wt. monosodium glutamate and/or glycine, alanine, lysine or methionine may also be included. The yeast strain may belong to one of the genera Saccharomyces, Candida, Kluyveromyces or Pichia. The potassium salt may be the hydrogen or dihydrogen phosphate, chloride, carbonate, bitartrate, glutamate, aspartate, lactate, succiriate, citrate, malate, fumarate or gluconate.
