Abstract

1420208 Fermented milk products ETABS MARCHAND ET VASSENEIX and J - C AUCHER 14 Nov 1972 [15 Nov 1971] 52564/ 72 Heading A2B In the preparation of fermented milk products of the yogurt type milk is seeded at the incubation temperature with a specific yogurt strain e.g. Lactobacillus bulgaricus, Streptococcus thermophilus, and a frozen and concentrated lactic ferment of the Lactobacillus casei species is also added. The concentration of the L. casei may be 100 milliards per gram. Fermentation may be for 2 to 2¢ hrs. at 37 to 45‹C. The amount of L. casei present may be 8 to 12 milliard living germs per 100 gm. of milk. The L. casei acts as an intestinal flora populating agent, especially when their ecological equilibrium has been disturbed by antibiotics.
