Abstract

1302991 Deoderizing vegetable protein. RALSTON PURINA CO 19 April 1971 9985/71 Heading C3H . The flavour of a vegetable protein isolate is improved by heating an aqueous slurry of the isolate to above 220‹ F. at a pH below 8 and subjecting the slurry to momentary physical washing, e.g. simultaneously, retaining the heated and washed slurry under a pressure sufficient to prevent volatilization of water therefrom, suddenly releasing the pressure, whereby water laden with odiferous materials is vaporized, and separating the vapour from the slurry. Examples of vegetable protein isolates are those derived from oilseeds, e.g. soybean, peanut, linseed, safflower seed, cottonseed, sesame seed and sunflower seed. The heating and momentary washing may be carried out in a so-called "jet cooker". The product is suitable for use in the food industry in a variety of foodstuffs.
