Abstract
1286288 Coffee; tea; and substitutes HAG AG 23 Oct 1969 52014/69 Heading A2B [Also in Division F4] In freeze-drying aqueous extracts of coffee, coffee substitute, or black or herb tea, initially the liquid is rapidly wholly or partially frozen (up to 50%, e.g. 10%-30%) by direct contact with cooling surfaces or agents having temperatures below the eutectic freezing point of the liquid, the resulting ice-liquid mixture is allowed to thaw partially at a temperature (e.g. 0‹C) exceeding the eutectic freezing point so that the unfrozen liquid droplets increase in size to give a natural colour to the dried product, and the mixture then is slowly totally frozen (e.g. at -30‹C) in a stream of cold air and dehydrated and crushed. It is stated that the colour of the dried product is determined, the fineness of its structure and hence by the freezing speed. To decrease the apparent density of the dried product resulting from a concentrated liquid, the liquid is foamed before or during the initial freezing by means of air, or an inert gas, or a gas mixture. The initial freezing is in a carbon dioxide atmosphere.
