1283350 Milk product UNILEVER Ltd 30 Dec 1969 [31 Dec 1968 (2)] 61974/68 and 61975/68 Heading A2B A dry composition which may be hydrated by the addition of milk to form a set milk product comprises dry milk solids, a cold water gelling agent, for example a cold water gelling starch, preferably in an amount of 1-10 units (1 unit being the minimum weight of the agent which will set to form a gel in 1 litre of water) per 1000 grams of non-fat dry milk solids, a dry preparation of milk clotting enzyme, for example rennet, preferably in an amount of 1-10 units (1 unit being the weight of preparation required to set 1 litre of milk at 20‹C in 2 hours) per 1000 grams of non-fat dry milk solids, and a lactone of a sugar acid.
