1397845 Sweetening compositions C P C INTERNATIONAL INC 30 Oct 1972 49998/ 72 Heading A2B A sweetening composition comprises 10-50 wt% levulose and a carbohydrate material being 50-80 wt% starch hydrolysate of dextrose equivalent 1-25 and a polysaccharide content having a degree of polymerisation greater than 4, of at least 60 wt%, the polysaccharide content of the total composition, having a degree of polymerisation greater than 4, being at least 37 wt%. The composition may be prepared by a spray drying an aqueous mixture of the starch conversion product and a levulose bearing syrup, optionally containing dextrose at a temperature of 130 to 250‹C. Excess water may be removed before spray drying by heating the syrup to 50 to 100‹C. The low dextrose equivalent starch hydrolysates may be prepared by acid or base hydrolysis, pyrolytic hydrolysis, enzyme conversion or a combination of these from various starches, preferably corn starch and waxy maize starch.
