Abstract

1,228,938. Matting cheese curd. B. E. BUDAHN. 12 July, 1968 [19 Oct., 1967], No. 33430/68. Heading A2B. Substantially drained unmatted curd is deposited in the form of a continuous layer on a long continuously operating substantially imperforate first belt conveyer, the continuous mat at the end of its run being inverted without otherwise disturbing it and transferred in imcompressed state in inverted position on to a second long continuously operating belt conveyer, the conveyers being operated at such a speed that by the end of its travel on the conveyers the curd will be sufficiently matted for looping and have reached a predetermined acidity. The moving curd may be exposed to live steam. Fig. 1 shows a suitable apparatus according to the invention, curds and whey from a tank 13 being separated on a perforated conveyer indicated generally at 12, and the drained whey being supplied to the first conveyer of the matting apparatus indicated generally at 40. The matted curd issuing from the apparatus is cut by guillotine 104 and is passed to further processing. At the beginning of the path of travel of the first conveyer there are provided 91 and 92 (Fig. 4) whereby the curd to be matted is first restricted in lateral flow and then permitted to expand laterally.
