Abstract

1,207,486. Dehydrated potato product. J. & J. COLMAN Ltd. 2 Nov., 1967 [4 Nov., 1966], No. 49655/66. Headings A2B and A2D. In a process for the production of a reconstitutable dehydrated cooked potato product cooked potatoes are mashed, the mash is frozed substantially throughout followed by thawing to produce a moist thawed material and the moist thawed material thus obtained is dried in airpermeable form by passage of hot gas therethrough whereby a product in the form of a crumble is obtained. The mash is riced by screening before drying so that the final product has a particle size of from # inch to ¢ inch, preferably # inch to “ inch. Optional additional ingredients mentioned are salt, whole and non-fat milk solids, meats, meat concentrates, vegetables, natural and artificial flavourings, sodium sulphite or bisulphite, glyceryl monostearate, and sodium acid pyrophosphate.
