[Also in Division F4] Aggregate type fruits such as raspberries are subjected to a drying treatment to dry the fibres interconnecting the fruit cells and are then frozen by contact with a fluid at -100‹F. or below. The fluid may be gaseous or may be liquid nitrogen and the cooling may be by immersion or spraying. The drying is carried out by passing a stream of air or nitrogen effluent over the fruit. Prior to drying the fruit may be sorted, grated and washed and after freezing may be post cooled and packaged.
