-1- La présente invention concerne un système de génération de vapeur d'eau pour un four de cuisson à étages, plus particulièrement pour la cuisson du pain, viennoiseries et pâtisseries. Il est connu qu'il est nécessaire d'humidifier les pâtons à cuire lors des premières minutes de cuisson en saturant de vapeur d'eau la chambre de cuisson. La vapeur d'eau ainsi créée se dépose sur les pâtons et leur permet un gonflement plus important tout en donnant de la brillance et de l'uniformité à la coloration de la croute. Le dispositif de génération de vapeur est communément appelé appareil à buée dans le métier de boulanger, Les fours de cuisson à étages comportent une enveloppe avec une ou plusieurs chambres de cuisson qui sont disposées les unes au-dessus des autres de manière étagée. La chauffe est réalisée par des résistances électriques situées en voute et en sole. Un dispositif générateur de vapeur est disposé dans la chambre de cuisson le long d'au moins un côté de la chambre. Il est constitué d'une masse métallique ou de pierre réfractaire ou de tout autre matériau très conducteur thermiquement. Il peut être chauffé soit par une résistance indépendante soit par la chaleur de la chambre de cuisson. Il est relié à une source d'eau par une vanne d'alimentation en eau et produit de la vapeur d'eau par injection d'eau sur sa surface chaude. L'injection d'eau peut être commandée manuellement ou automatiquement. Pour une plus grande efficacité d'évaporation le générateur de buée est incliné de telle sorte que le point d'injection soit situé au plus haut, l'eau liquide s'écoulant par gravité vers le trop plein, situé à l'arrière du four. Si l'eau est injectée en excès, la chaleur de l'appareil ne permet plus la vaporisation et l'eau excédentaire s'évacue par le trop plein. Avec l'utilisation on constate une oxydation des surfaces métalliques ainsi qu'une formation de tartre qui viennent réduire l'efficacité du générateur de buée et obstruer le trop plein. Le phénomène est plus ou moins rapide suivant les caractéristiques de l'eau utilisée. Lorsque le trop plein se bouche, l'eau excédentaire ne peut être évacuée rapidement et stagne dans l'appareil à buée. L'eau stagnante diminue fortement la capacité de l'appareil à buée à remonter en température. L'efficacité de l'appareil à buée peut être si réduite que le boulanger injecte de plus en plus d'eau pour obtenir un peu de vapeur, contribuant à augmenter la proportion d'eau stagnante. Il est donc nécessaire de démonter régulièrement ces appareils afin de les débarrasser du tartre formé et des résidus d'oxydation. 2964831 -2- Afin d'évacuer vers l'égout le trop plein de chaque appareil à buée, ce dernier doit être relié de manière étanche à une descente d'eau de retour à l'égout. Il n'est pas possible de relier ensembles les différents trop plein ou leur descente d'eau sous peine de voir l'eau excédentaire des étages supérieurs se répandre dans les appareils à buée des étages 5 inférieurs. On constate que les fours de boulangerie sont très souvent encastrés sur leurs trois côtés et seul l'avant du four, dénommé bouche, reste accessible. L'accès aux générateurs de vapeur est par conséquent très difficile. Il en découle que le démontage des générateurs de vapeur est une opération technique lourde et immobilisante mais qui nécessite d'être 10 réalisée régulièrement. D'autre part l'obligation d'étanchéité du trop plein avec la descente de retour à l'égout complique aussi leur remontage. La présente invention est un système de génération de vapeur comportant sur un ou plusieurs étages, un point d'injection d'eau, un appareil à buée pour stocker la chaleur, un trop plein d'évacuation d'eau excédentaire ainsi qu'un ou plusieurs collecteurs 15 caractérisés en ce que les trop plein des appareils à buée viennent s'emboiter sans liaison mécanique fixe à l'intérieur de ce collecteur. Ce collecteur est de section fermée et permet la collecte des trop plein d'eau des générateurs de buées via des orifices de section supérieure à la section des trop plein. Ce collecteur peut être commun et disponible pour tous les appareils à buée. Une bavette est fixée à l'intérieur du collecteur 20 au dessus de chaque orifice d'emboitement afin d'empêcher toute échappement d'eau à travers l'orifice d'emboitement. Grace à l'invention, l'absence de liaison mécanique fixe entre le collecteur et les trop plein permet le montage et le démontage de chaque appareil à buée par emboitement et déboitement sans aucun outil et avec pour seul accès disponible la bouche de la chambre 25 de cuisson. Grace à l'invention les différents étages peuvent continuer à fonctionner même en l'absence d'un ou de plusieurs appareils à buée. Il est possible de démonter un ou plusieurs appareils à buée alors que le four est en cuisson sur les autres chambres. Le nettoyage de ces appareils à buée devient une opération facile à réaliser et qui peut être 30 réalisée sans immobilisation du four. -3- L'invention sera décrite plus en détails, en référence aux figures suivantes : La figure 1 est la coupe verticale d'un four de boulangerie à 5 étages (1). La section de l'orifice d'emboitement (10) est supérieure à la section du tuyau de trop plein de telle sorte à permettre une liaison par emboitement qui reste libre. L'appareil à buée (2) est positionné de telle sorte que l'extrémité de son trop plein (5) soit située à l'intérieur de la section du collecteur (3). Les appareils à buée (2) n'ayant pas de liaison mécanique fixe avec le collecteur commun (3) ceux-ci restent libres d'être retirés par la bouche du four (7).
