Sur l'axe 1 est montée une tête cylindrique 2 dont le diamètre extérieur est sensiblement égal au diamètre de l'ouverture du pot ou récipient de vente 5 représenté à la partie inférieure de la figure. A l'intérieur de la tête 2, sont fixées des aiguilles 3 dont le nombre et la position dépendent de la matière à percer et du volume d'égouttage désiré. Lorsque l'outil arrive dans la position représentée sur la figure 2 par descente de l'arbre 1 les extrémités des aiguilles 3 viennent au contact du double fond 6 et forment dans celles-ci une multiplicité d'ouverture 8 permettant l'écoulement du sérum.Puis le mouvement alternatif de la tête 2 élargit des ouvertures 8 comme cela apparaît sur la figure 3 alors que les lames 4 portant contre la paroi interne du récipient 5 provoquent le décollement du caillé. Bien entendu cette opération est effectuée après que le lait introduit sous forme liquide soit caillé, les aiguilles 3,passant à travers la masse du caillé pour venir perforer le double fond,qui peut être constitué soit par un opercule d'aluminium de toute autre matière thermoscellable sur un épaulement du godet, soit encore par le fond d'une faisselle rajoutée à l'intérieur du godet ou récipient 5. Normalement, les cuillères occupent la position représentée sur la figure 4 et lorsque à la suite de sa descente la tête 12 vient en appui sur le rebord du récipient 5 le ressort 10 est comprimé et cette compression permet à l'arbre 11 de continuer son mouvement vertical descendant, mouvement vertical qui entraîne le téton 16 qui lui-même coulisse dans la lumière 17 qui provoque la rotation de la cuillère 13 correspondante autour de l'axe 15 qui est fixe par rapport à la tête 12. Lors du mouvement de descente de l'arbre 1, les cuillères 13 pénétrant dans la masse du caillé provoquent dans un premier temps la coupure de celui-ci puis, la rotation des cuillères permet de briser cette masse en gros morceaux ressemblant à ceux que l'on trouve dans le récipient lorsque celui-ci est rempli à l'aide d'une louche.
