Abstract

The still is of the continuous type with wine preheater. Vapour produced in the distn. column is gathered in a receiving chamber and discharged via a coil which passes through the preheater, transferring heat from discharged vapour to incoming wine. The vol. of the receiving chamber is now increased to an extent that heavy fraction or tail vapours fall back for separate condensation in the distn. column, rather than being carried over to be condensed in the preheater coil. The vol. of the receiving chamber is pref. 3 or 4 times greater than vol. of the top chamber of the distn. column. The receiving chamber is pref. fitted with a perforated, horizontal screen to promote condensation of heavy fraction vapours in the receiving chamber. A prod. of higher quality is obtd. with much lower content of condensate from heavy fraction vapours. Analysis shows that the content is always below 25 g./hl. at 100 degrees C, compared with an average for earlier stills of 35-40 g./hl. at 100 degrees C.
