Abstract
A packaged hard boiled egg is produced by poaching a raw egg into a shaped bag, resembling three quarters of an egg, and made of a retort pouch film or of high-density polyester or polyethylene, taking care not to damage the egg pellicles. This container is then sealed and boiled with the egg inside it. This hard boiled egg has excellent keeping properties and cannot be broken in transit or storage like natural eggs. The good taste of the egg is preserved.
