Abstract
Produit alimentaire texturé et son procédé de préparation. Le produit alimentaire selon l'invention est caractérisé par le fait qu'il comprend des morceaux de matière comestible ayant une structure fibreuse, lamellaire ou striée cohérente et qu'il contient un agent de gélification ionique et un ion métallique non toxique reactif vis-à-vis de cet agent. Application à l'industrie alimentaire.
