Abstract

An industrial method of removing parts of the skeleton, including the head, from fish applies heat to the connective tissue which joins in the skeletal parts to the remainder, Pref. by applying steam for 2 secs. The skeletal part is then pulled away from the edible part of mechanical force. This does not affect the quality of the edible part. This method is suitable for the mass processing of cod, haddock and whiting.
