Abstract

Ethanol is produced by fermenting a strain of souharomyces cervisae in must from yam, cassava, taro, banana or pineapple. Provides a source of ethanol, not dependent upon seasonal crops of sugar cane, beet. Tubers of yam, cassava, taro are peeled, blanched, ground and acid hydrolysed at 3-4 kg press, then juice is neutralised after solids sepn. Ripe bananas are peeled, ground, pasteurised and depectinised. Pineapple is peeled and pressed. Yeast is pref. used in its active growth phase.
