Abstract

An agent for imparting an intense and stable turbidity to a liquid is prepd. by enzymatically adjusting the pectins content of a hazy vegetable (fruit) juice as a function of the desired viscosity, removing the oversize particles by coarse filtration or centrifuging, subjecting the filtrate to a fine filtration or ultrafiltration to obtain a clear filtrate contg. sugars, acids, inorganic salts and low m. wt. cpds. and a concentrate contg. high mol. wt. colloids and particles of suitable size, the concentrate forming the reqd. agent. Used for imparting cloudiness to beverages. The process permits the prepn. of a first pecting free prod. with an adjustable soluble dry extracts conent and of a second prod. with a lowe degree o turbidity and almost free of low mol. wt. solutes but with an adjustable pecting content according to the ultrafiltration membrane used. The presence of antifugic materials ia also avoided.
