Abstract

Delicatessen prods., partic. of the pate type, have hitherto been packed in a retractable film after cooking in a mould lined with lard. The latter does not improve the taste and adds to the wt. In the new process the uncooked paste is introduced inside an impermeable plastic tube of the sausage casing type; both ends are closed and the tube is placed in a mould, with a polygonal section, for cooking. The prod. is then removed and cooled. No further packing is needed and good keeping props. are ensured. The prods. have an improved taste cf. those cooked with a fat lining. All the flavours are retained during cooking in the impermeable plastic casing.
