Abstract

Wine-making process, which includes a heating stage for the must and for its simultaneous circulation, is described in the parent patent. In the new process the pressed grapes, before their introduction intot he system, are led through a draining device which separates a fraction of the liq. they contain before the must is sent to the wine-making process proper. It thus becomes possible to heat the mass in a reduced time and in the same recipient as that used for the treatment; diffusion is improved, both during heating and in the stages which follow, by the energetic agitation of the mass. The treatment tank contains two concentric tubes in its axis which form an annular gap between them in which steam can be condensed or heating or cooling water circulated. A screw conveyor, arranged inside the smaller tube circulates the must, either upwards or downwards, so as to induce a suitable movement in the mass which fills the tank. The coefficient of thermal exchange is increased and this improves the extraction and recycles the colouring substances contained in the must.
